  • Winemaking

    The grapes are destemmed and pressed very gently in a pneumatic press. Before fermentation, the juice is cooled to allow natural separation of the sediments and the juice. Selected yeasts are then added to trigger fermentation. Fermentation takes place on the skins in stainless steel tanks at a controlled temperature (16 °C–18 °C) for approximately 15 days. The wine is left on the lees for approximately 40 days before being bottled.
